"Hey, Sawbones,

I'm just carrying on an ole family tradition."

-Hank Jr

ANDREW BROCHU

After over a decade running restaurants in Chicago, Andrew has returned to the Southeast to open a casual, throwback-style joint, inspired by the family gatherings he grew up attending. He may be Michelin-starred and a James Beard Award finalist, but Andrew doesn’t care much for formalities. Does it taste good? That’s what matters. His passion for hospitality extends beyond cooking. Andrew makes a killer bolognese, will talk your ear off about current events, and loves hanging out with his rescue dog,Huckleberry.

SOPHIE BROCHU

Born and raised in Savannah, Sophie is back in her hometown after thirteen years in Chicago. A musician, writer, and philosophy major, Sophie wants to talk about local alligator sightings, the book you’re reading, and why sharing a meal with loved ones releases dopamine. Andrew and Sophie met working in a restaurant in Chicago. They’re happy to be home, building something special with the people they love.

DAVE BAKER, chef

This is the story of a good ole Midwestern boy who found himself in the Hostess City. Born and raised in South Dakota, Dave has worked at a wide variety of restaurants and bars, from dives to Michelin-starred establishments. He is a firm believer in Jameson & pickle juice, Steak Night, and though he hasn’t been able to part ways with his snow boots, Dave enjoys rocking a pair of shorts in this fine city.

Georgia Vinzant Baker, PASTRY

When Georgia was a kid, her family liked to go to the local Mexican restaurant for sopapillas, or fried cinnamon sugar tortillas, dipped in honey butter. Born in Mississippi, Georgia’s appreciation for pastry has led to her baking in top kitchens across the country, including Chicago’s Graham Elliott, where she met her husband, Dave. Don’t ask her for any butter—she’s already used it all.

Ben Kimbrough, operations

After 17 dedicated years with Darden Restaurants, Ben is excited to be in Savannah, where “genuine southern hospitality is evident everywhere you go.” He has fond memories of churning peach ice cream on the back porch with his grandparents, making Mom’s stuffed cabbage, and cooking gumbo with his dad. He loves good bourbon, a large glass of iced sweet tea, and spending time with his two boys.

Jessica Kimbrough , administrator

A mom of two boys, Jessica is an avid reader, ex-project manager, and UGA alum. She’s also Andrew’s little sister. To quote her eight-year-old son, Henry, Savannah is cool because it has “good shrimp, nice houses, and cool trees.” Jessica is always up for loaded nachos. She may or may not be working in the office. She’s mostly here for the snacks.
